Fajita Veggie Salad

Anybody in a hurry and need a last minute dinner idea?? Well I got just the thing! This fajita veggie salad can be made in only 15 minutes!

I am the type of person who can have Mexican food any day of the week which is why this recipe is perfect! It adds just the right amount of kick to all the different flavors incorporated! Check out the recipe below and I hope you like it!!



Fajita Veggie Salad Ingredients

2 cups romaine lettuce chopped

4 baby bell peppers sliced

1 jalapeño chopped (up to you if you want to keep seeds in)

1/4 onion leave in slices

1/4 cup black beans

1/4 cup salsa of choice (I love Mateos or Frontera!)

2 tablespoons cheddar cheese



*****Optional*****

Place a cup or two of my cilantro lime cauliflower rice under the salad!! Then it’s a yummy burrito bowl!


Here is the link to my cilantro lime cauliflower rice! I definitely think it’s 10 times better than chipotles plus you can add more or less of an ingredient if you don’t dig something that much!




Fajita Veggie Instructions


  1. Start by preparing all of your veggies and getting them cut accordingly.

  2. After veggies are cut, chop your lettuce and set aside.

  3. Next, in a medium size non stick pan spray a couple spritz of olive oil then add the bell peppers, jalapeño, and onion. Heat on medium heat stirring occasionally. You want a nice char to form.

  4. Once a char is achieved add the beans and salsa. Heat just until everything is hot.

  5. Next it’s assembly time!

  6. If you chose to add the cilantro lime cauliflower rice place that first then add the chopped lettuce. On top of the lettuce add the fajita veggie mixture, cheese, and any other type of topping you would like!!

  7. You’re done! Now go gobble down that food and enjoy the master piece that you put together!


This recipe is so easy for busy work days or days where you just don’t know what to eat! The crunch from the lettuce works perfectly with the veggies and if you add the cauliflower rice then the flavors are all immaculate! If you choose not to make the cilantro clime cauliflower rice I recommend adding some chopped cilantro and lime juice to your romaine lettuce, I don’t know why but that flavor combo just adds so much to the overall dish!!!
