Caprese Toast with a Twist

Summertime means longer and hotter days so refreshing meals are a must! This recipe is perfect for the days when you want something light and refreshing yet can easily be made. This is one of my go-to breakfast meals during the week since it’s so easy and I usually almost always have all of these ingredients. Fresh basil is a life changer for this so make sure you have some, the freshness just adds the perfect flavor!

Ingredients

1 piece of toast (toasted to your preferred crunchiness)

2 cherry tomatoes

2 basil leaves chiffonade

A drizzle of Balsamic glaze preferred ( a little bit of balsamic dressing will do the trick too if glaze is not readily available!)

2 tablespoons feta

1 tablespoon extra virgin olive oil (EVOO)


Instructions

  1. First, start off by toasting your piece of bread.

  2. Next, slice the cherry tomatoes in half and set aside.

  3. Then, in a small bowl combine the EVOO, feta, salt, and pepper. Mix together until a mixture ,that will resemble paste (I know weird comparison), is formed and set aside next to the tomatoes.

  4. Now it’s time to chiffonade the basil! I have a link below that you can click to see how to learn and utilize this technique. It sounds a lot trickier than it really is. Once you chiffonade the basil set aside with the rest of the ingredients that you have already prepped.

  5. Once the bread has toasted to your preferred crunchiness then it’s time for assembly!

  6. First, start off by adding the feta EVOO mixture to the bread then layer on the sliced tomatoes and chiffonade basil. Lastly take the balsamic glaze and drizzle a little to the top and voila! You got yourself some yummy toast that takes about the same amount of time to make as it does to toast a piece of bread!!
