Happy Sunday and happy Mother’s Day!!! Today is such a special day because we finally get to shower all of our Moms in all of our extra love and appreciation, Moms are literally the best!!
This recipe is perfect for the last minute breakfast or brunch but it is also a recipe that looks like a lot of effort was put into it so kind of perfect for any day that has a celebration!
I tested this recipe out last week and my whole family loved it so I knew it had to be brought back for Mother’s Day brunch! It would pair perfectly with some eggs any way and a mimosa but of course optional! Mimosas might be necessary in my opinion but hey that’s just me thinking out loud! 🤷🏼♀️

French Toast Ingredients
4 slices of bread
1/2 cup egg whites
1/4 cup cashew milk
1/4 teaspoon salt
3 tablespoon cinnamon
1/2 cup sugar
***drizzle of glaze (recipe below)
French Toast Instructions
In a large bowl add the egg whites, cashew milk, 1 tablespoon cinnamon, and salt then whisk together.
Next, grab a medium sized plate and pour the rest of the cinnamon and sugar. Mix and set aside.
Now, dip your bread into the wet mixture and let it soak on both sides.
Meanwhile, heat a large non-stick frying pan or griddle to medium to medium-high heat.
Once the pan is heated cook the slices of bread until both sides are golden brown. I would recommend using a non- stick spray if your pan isn’t 100% non-stick. This just helps ensure that the bread can be easily removed or flipped.
After both sides are cooked remove from heat and place bread into the cinnamon sugar mixture. Coat both sides evenly in the mixture and tap off excess (this will help ensure that you don’t grab too much of the mixture so that your French toast isn’t just literal sugar!)
Once the slices are all good top with a drizzle of glaze and serve!!
Glaze Ingredients
3 tablespoons powdered sugar
1 teaspoon cashew milk
1/4 teaspoon vanilla extract
Glaze Instructions
In a small bowl add all the ingredients and mix until fully combined. When adding the milk start with a little bit at a time, powdered sugar doesn’t need that much liquid to get to a glaze consistency so just be very cautious with adding it. It’s possible to add more but not possible to take away! (In this case you could add more powdered sugar but that’s such a hassle 🤪)
Once you reach the consistency that you want set aside and use when French toast is done cooking.
***if when you go to use it, it looks a little solidified just give it a good mix and it should go back to the glaze consistency!!
