Ever since finding out about my dairy intolerance I’ve been trying to be careful about how much dairy I have just because I know that I’ll be sick or not feel better later. A lot of cheesy dishes I don’t miss which is weird because those use to be my safety dishes when I would go to a new restaurant and wasn’t sure what I wanted to eat or wasn’t experimental enough to try new things. One thing I have missed so much is chicken fettuccine alfredo with broccoli. This use to be my FAVORITE dish at any Italian restaurant and especially when my mom would make it at home. Obviously with my lifestyle change I can’t have that anymore, well I can but I know I’ll be sick after. With that in mind I’ve been trying to find good substitutes for that sauce and oh my gosh let me put you on to this one. It’s super healthy, very little ingredients, and quick to make!! The black pepper in this helps to give the sauce the added depth it needs and I’ve always said it but you can do a lot with salt and pepper which this recipe definitely shows!
——Ingredients——
One medium sized head of cauliflower
1 cup of warm water
1 teaspoon garlic powder
1 teaspoon garlic salt
1/4 teaspoon salt
1 teaspoon course black pepper
2 teaspoons avocado oil
——Instructions——
To start we are going to prepare our cauliflower. Cut the cauliflower into florets and get water ready in a pot. Then cook your cauliflower. I like to steam my cauliflower just until it’s fork tender, about 10 minutes.
Once the cauliflower is done I grab a spoon and take the cauliflower out of the water. DO NOT STRAIN THE WATER. The cup of water needed for the recipe will come from the water we used to steam the cauliflower.
Next, grab a blender ( I use a nutri bullet) and add the water, garlic powder/salt, salt, oil and pepper. Lastly, throw the cauliflower in.
Blend all together until the ingredients are fully incorporated together, about 3-4 minutes. I taste the sauce after I blend just to make sure I don’t want to add any more of the seasonings.
That’s it sauce is done!
This is a perfect starter sauce that can be easily added to. I’ve found that cauliflower helps to give that Alfredo taste but it definitely is not Alfredo so I don’t want to mislead the taste flavors. If you added some cheese (vegan or regular) and some milk (whatever type just not sweetened) then you can get closer to the Alfredo sauce but I’ve been on the hunt to make the healthiest Alfredo that is still so delicious! This sauce holds that creaminess that you get with cheese but no cheese is needed! I added this sauce to heart of palm linguine for my pasta and some broccoli!! I still can’t believe I was able to get this good of a sauce with basically just a head of cauliflower!!
