Cilantro Cauliflower Rice

This week Chipotle finally came out with cilantro cauliflower rice but little did they know that I’ve already perfected the recipe and it’s super simple! I love that more big restaurants are adapting to cater to more food intolerances or preferences so I’m super stoked that Chipotle is adding this to their menus but let’s be real I really love knowing what is going exactly into my food. I might be biased but I think that I got the amount of each ingredient perfectly to make a super yummy meal which when eating I couldn’t even tell that it wasn’t real rice. I know some people don’t like the textures of cauliflower rice but you need to try the technique of browning the rice.....GAME CHANGER! I was so excited when I nailed the amounts of each ingredients because I need to switch my dinner up, I’ve incorporated cauliflower rice into all of my dinners this week so I wouldn’t be wasteful 😂 but I’m not mad at all I was able to play around with the new dishes! In the beginning there was not enough cilantro or too much lime but I finally got it! Totally recommend this to everyone! —— Ingredients ——

3 cups cauliflower rice

1/4 cup freshly squeezed lime juice

1/3 cup chopped cilantro

1/4 teaspoon sea salt



—— Instructions ——

  1. First, cook the cauliflower rice (will vary on the rice you bought and what it’s packaged in). Cook until just tender.

  2. Once the cauliflower rice is steamed pour the rice into a medium saucepan and cook on medium high heat for about 5-8 minutes. Stirring every minute or so. You want the rice to get some browning.

  3. While the cauliflower rice is browning, chop the cilantro and set aside.

  4. Next, juice the lime and set aside.

  5. Once the cauliflower is browned transfer to a medium size bowl and add in the chopped cilantro, lime juice, and sea salt. Mix until fully incorporated.

  6. Last step and I think the most important is to eat and enjoy!
