Coconut Crusted French Toast

This recipe is the perfect addition to your Sunday brunch! The crispiness of the coconut with the bouncy toast is really just elite! I had been really craving coconut lately (mostly in a piña colada 😂) but decided to try and challenge myself and throw some different flavors together. This idea ended up giving us a magnificent creation! I also decided to add a caramelized banana walnut glaze to the top which really helped to play on to those Caribbean flavors! I highly recommend making these for your next brunch adventures and maybe even pair it with a nice and cold piña colada! No one is judging!!! Booze and brunching just work too perfectly together.


The only tips I have for this recipe is to really just go with the flow. That’s the beauty of French toast, it’s a very basic recipe which means endless possibilities and combinations!

I don’t like having an overly sweet French toast itself but like to add the sweetness later with toppings so do take note of that when going through my recipe. I do however, mention in the recipe some opportunities where you can add more sweetness if you desire!!!

Coconut Crusted French Toast


-Ingredients-

4 slices of bread

1/2 cup egg whites

3 tablespoons cashew milk

1 tablespoon cinnamon

1/4 teaspoon salt

1/2 cup unsweetened coconut flakes

Pancake syrup (amount is up to you!)


-Instructions-

  1. In a large bowl add the egg whites, cashew milk, cinnamon, and salt then whisk together. (If you want a sweeter toast you can add 1/4 cup of sugar to this mixture but just be aware that at the end the caramelized banana and the pancake syrup will add a lot of sweetness so it is up to you!)

  2. Next, grab a medium sized plate and pour the coconut flakes on top. Set aside.

  3. Now, dip your bread into the wet mixture and let it soak on both sides.

  4. After both sides are wet dip the slice of bread into the shredded coconut. Coat both sides evenly.

  5. Meanwhile, heat a large non-stick frying pan or griddle to medium to medium-high heat.

  6. Once the pan is heated cook the slices of bread until both sides are golden brown. I would recommend using a non- stick spray if your pan isn’t 100% non-stick. This just helps ensure that the coconut flakes crust on the bread and not the pan.

  7. Once the slices are all golden top with whatever you desire and serve!! I topped mine with caramelized bananas and chopped walnuts with a little sprinkle of the shredded coconut flakes. Oh of course can’t forget the pancake syrup.



Caramelized Bananas and Walnuts


-Ingredients-

1/2 banana

1 tablespoon chopped walnuts

2 tablespoons monkfruit sugar

A couple sprays of olive oil

1/2 teaspoon cinnamon

1 tablespoon pancake syrup



-Instructions-

  1. Grab a small non-stick pan and add the banana, oil spray, sugar, walnuts, and cinnamon.

  2. Let the mixture cook together for about 2-3 minutes. Stir the mixture every 30 seconds.

  3. Once the ingredients are incorporated together and a nice golden color is achieved add the pancake syrup. I added the pancake syrup to help make more of a glaze that could be added on top of the toast.

  4. Once the glaze starts to mildly bubble then you are done!!

  5. Lastly, too your French toast and add anything else you desire!!!



The twist on this French toast was the coconut flakes and I have to say this was A M A Z I N G!!! The coconut crunch was to die for! I hope you loved it as much as I did!
