Egg Roll in a Bowl

Happy Wednesday!!! We are officially half way through this week and one thing to look forward to, if you are in the Chicago area, is some nice weather! We had a few days of sunshine but now unfortunately rain has come back but that’s Chicago weather for you, unpredictable!

This recipe is one of my staples for during the week when I don’t have too much time to cook but know I want something that is filling and delicious!

This egg roll in a bowl recipe is the best one yet because you really can add anything you would like to it, I wrote down some of the most common household Asian seasonings and liquids that hopefully everyone has but if you have more things like hoisin sauce or sesame oil then go right ahead and add them!


Ingredients

1 tablespoon olive oil

1/2 teaspoon minced garlic

1/2 teaspoon minced ginger

Protein of choice (ground turkey/beef/chicken, or any plant based options just make sure it resembles ground meant) amount varies on type of protein used and how much yo I would like!

2 tablespoons rice vinegar

1 bag of broccoli coleslaw

1/4 cup soy sauce

Salt and pepper to taste


**Optional Toppings**

Toasted sesame seed

Bean sprouts

Green onions sliced

Sriracha sauce


Instructions

  1. In a large sauce pan add your olive oil, minced garlic, and minced ginger. Cook on medium high heat just until the garlic starts to brown.

  2. Next, add your protein of choice and cook fully.

  3. After the protein is cooked, add as much or as little of the bag of broccoli slaw that you would like and rice vinegar. I usually add the whole bag so then I can have leftovers and a potential lunch for the next day!

  4. Lower the heat to medium and cover, let steam for about 5 minutes. (Steaming just helps to make sure that the veggies get soft enough.)

  5. After veggies are soft add the soy sauce and mix until fully incorporated, this is when you can add some salt and pepper if you desire!

  6. Finally, add it to a plate or bowl and serve it up! I like to top mine with toasted sesame seeds, bean sprouts, green onions sliced, and of course can’t forget the Sriracha!! I love my dishes spiccccyyyyyyy!
