Happy almost thanksgiving! I wanted to share with you guys a simple salad that has so many flavors it’s crazy! These flavors are perfect together and work so well with a dinner that may be seen as heavier, such as a traditional thanksgiving dinner. It adds a nice light aspect to the meal.
Fall Apple Salad
—— Ingredients——
1 large honey crisp apple cubed
1/4 cup pomegranate seeds
1/3 cup balsamic raspberry vinaigrette
Half of a lemon juiced
3-4 cups of mixed greens
1/4 cup chopped pecans
—2 tablespoons feta cheese (optional)
Homemade Balsamic Raspberry Vinaigrette
—— Ingredients ——
3 tablespoons balsamic vinegar
1 tablespoon extra virgin olive oil
2 teaspoons avocado oil
1 garlic clove, minced
1 teaspoon Dijon mustard
1 tablespoons of mashed raspberries
Salt and pepper, to taste
—— Instructions ——
First, place the greens in a large bowl. Then slice the apple into cubes. I chose cubes so that the apples could be distributed more evenly.
Then add the cubes apples, pomegranate seeds, and chopped pecans to the greens.
Next, cut one lemon in half and squeeze on top of salad. This helps bring some acidity to the flavor and helps the leaves from not browning too quickly.
I chose to put feta cheese as optional because the flavor would go really well with this salad but I know that not everyone enjoys the taste or can have/ wants cheese.
In another bowl mash about 4-5 raspberries until it looks almost mushy.
Then add the rest of the dressing ingredients and mix until fully combined. I brought this salad to a different house so I added the dressing closer to eating it. This just helps to make it not so soggy and meh looking. If you are going to eat the salad immediately after making it then you can toss the dressing into the salad.
This salad is super easy to put together and has a lot of ingredients that most of us already have in our house! During the week this is one of my go to salads for lunch or dinner and I loved it so much that I wanted to share it with my loved ones!! The homemade dressing adds such an amazing taste that you can’t get from a bottle. I recommend this salad for anyone that wants to bring something amazing yet easy to a dinner!
