Happy New Year’s Day and official start of 2021!!
These waffles are perfect for any morning and are super quick to make! These waffles also pack a whole serving of vegetables and lots of protein and fiber! They have all of that yet are still delicious!!!! If you would like to make them keep on reading. 😊
——— Ingredients———
1 large egg (flax/ Neat egg sub to make vegan)
1/2 cup egg whites or (applesauce to make vegan)
1 cup cooked cauliflower rice
1 tablespoon coconut flour
1 teaspoon baking powder
1 teaspoon vanilla extract or liquid stevia
1/2 tablespoon flax seed
1 tablespoon sugar (monk fruit, stevia, etc...Its your choice!)
———Instructions———
In a medium bowl crack open the large egg or add your alternative egg. Beat until the yolk and egg white is combined.
Next, add to the egg the egg whites and vanilla extract/liquid stevia. Mix until combined and set aside.
In a small bowl combine all the dry ingredients - coconut flour, flax seed, baking powder and sugar. Stir all of the ingredients until combined.
Add the dry ingredients to the wet ingredients and mix. After everything is incorporated you can add the cooked cauliflower rice. With the cauliflower rice you can add the cauliflower rice to a blender or food processor to make it smooth if you don’t like chunks or you can just add the cauliflower rice straight in. Your preference!
Now is the time to add any more fun ingredients to the batter like fruit or chocolate chips!
Heat up a mini waffle iron or regular waffle iron. I used a mini waffle iron for mine.
Once it’s heated spray with nonstick spray and pour a little bit of the batter, this will differ depending on size of waffle maker.
Cook waffles to your desired brown and enjoy!
With this recipe I was able to make 7 mini heart waffles! These waffles are so yummy and super easy to make! I’m still shocked with the ingredients because they are all so good for you! Definitely a waffle that kids request!!
