Refreshing Poppyseed Clementine Salad

I used to hate salads and recently I’ve discovered how amazing they are! I was tasked with making a couple different salad-ish dishes for thanksgiving and this is one that I picked to make! The ingredients work so well together and is so light/refreshing. Perfect for when you need to quickly throw something together or if you want a nice salad to pair with dinner or just on it’s own!!! All of these ingredients are almost always in season so finding them should be relatively easy! The dressing isn’t heavy at all and the fresh lime juice brings out so much flavor from the other ingredients. Here’s how to make it!


Salad Ingredients

10 cups of mixed greens

8 clementines peeled and broken into segments

1/4 cup walnuts chopped

1/4 cup pomegranate seeds

1/3 cup poppyseed dressing (basically all Of what you make)


Poppyseed Dressing Ingredients

1/4 cup fresh lime juice

2 tablespoons avocado oil

1 tablespoon monkfruit sugar

2 teaspoons poppyseeds

1/8 teaspoon sea salt

1/8 teaspoon pepper


—— Instructions ——

  1. Start by combining all the poppyseed dressing ingredients in a jar with a top, I used a mason jar. Then shake to combine all the ingredients.

  2. Then in a big bowl add the greens then the poppyseed dressing. Mix well.

  3. Next, add the clementine segments, save about 4-5 of the segments for the top of the salad, and lightly mix.

  4. Lastly, add the chopped walnuts, pomegranate seeds, and the 4-5 clementine segments to the mixture. I like to add these last and not mix because it helps give a better look to the salad but also as people grab the salad they can better get a little of everything!


This salad was so yummy and has a pretty small clean up time! I recommend this salad when you want something lighter but still filling or if you want to pair it with a dinner that you know might be heavier.
