Merry Christmas for those that celebrate it and happy holidays! I made these soft chewy gingerbread cookies that have the perfect amount of sweet and perfect amount of spice! It’s tradition for my mom and I to always bake something for Christmas Eve and Christmas but this year I wanted to come up with my own cookie recipe since I knew that I most likely would not be able to eat the traditional ones (except those corn flake wreaths......SO ADDICTING). I love the gingerbread spices so I knew my recipes were going to revolve around those. I did some experimenting and was blessed with this yummy cookie! They are super easy to make and are a family favorite no matter the age!
—— Gingerbread Cookie Ingredients——
1 1/4 cup almond flour
1 cup oat flour
1/2 cup monkfruit sugar brown
1 tablespoon ginger
2 tsp cinnamon
1/8 tsp cloves
1/8 tsp nutmeg
1 tsp baking powder
1/2 tsp salt
1/4 cup maple syrup
1/4 cup molasses
1/3 cup unsweetened applesauce
2 tsp vanilla extract
—— Instructions ——
Preheat oven to 350 F and line a baking sheet with parchment paper.
In a small bowl combine the almond flour, oat flour, monkfruit sugar, ginger, cinnamon, cloves, nutmeg, baking powder, and salt. Mix until fully incorporated and then set aside.
In a medium bowl combine the maple syrup, molasses, applesauce, and vanilla extract until completely mixed.
Next, slowly add the dry ingredients to the wet ingredients until a dough is formed.
Cover the bowl with plastic wrap and let chill in the fridge for 30 minutes.
Once the 30 minutes is up scoop the cookies into balls that are about 2 inches. Roll them in between your palms then place onto the parchment paper and press down lightly. This dough will not get much bigger in width but it will grow a little with height so make sure that the shape your cookie is in is what you want to serve it like!
Place the baking sheet into the oven and bake for 12 minutes. Since this cookie has a darker dough it will be harder to tell when done so what I like to do is press the top of the cookie lightly with my finger and if it is bouncy it is done, if it seems wet then it still has some time.
Once completely baked take out of the oven and add some sprinkles if you would like!
This cookie is more of a cakey cookie so it won’t look like the normal chocolate chip cookie but let me tell you this one is so good! I don’t even know how to describe the inside other than wow, it’s not dry, it’s super tasty. It kind of gives me the same feel of chocolate lava cake, gooey in the middle but gooey and completely baked if that makes sense! This cookie was a huge hit with my family and they already requested I make more for our Christmas movie and hot chocolate night tonight, so big win!
