Gluten free pancakes! These pancakes are perfect for weekend mornings or just when you want some deliciousness! This recipe uses simple ingredients and is super easy to make! When I first started eating healthier I thought that I had to cut out everything that myself and society labeled as “unhealthy”, pancakes/ waffles were definitely part of that thinking. Looking back now eat what you want!!!! I cut out everything that was seen in society as not healthy so really everything other than fruits and veggies....not healthy at all on my part but I learned what to eat and how to remake some of my favorite foods to be healthier!! But also everything in moderation is what I tell myself. You need to be happy to be healthy and if you aren’t happy then you will hurt more in the long run. Anyways..... these last few weeks have been pretty tough for my family so I wanted to make something that could help cheer us up even just a little bit. In my family the key to the soul and happiness is food so I knew I wanted to make something delicious but healthy. This recipe is very basic and can be customized to however you would like!
Ingredients
1 banana mashed
2 eggs (neat vegan eggs can be substitute)
1/4 tsp baking powdered
1/2 tsp vanilla extract
1/2 tsp cinnamon (optional)
Toppings
2 tablespoons blueberries
1 tablespoon maple syrup
1 tablespoon monk-fruit powdered sugar
Instructions
Mash the banana first then add the egg yolks, cinnamon, and vanilla extract to the bowl.
In another bowl whisk the egg whites until a stiff peak has formed, this will help add volume during the cooking process.
Slowly fold the egg whites into the banana mixture until fully incorporated.
Cook in a non stick pan.
Top the pancakes with whatever you want, I choose monkfruit powdered sugar, blueberries, and a little bit of maple syrup!
These pancakes are so yummy and moist but just note that when cooking they don’t bubble the same way that regular pancakes do so how I knew when one side was done was I went around the pancake with my spatula to see if it would lift. If all sides lifted then I knew it was done!
